CoCorosco Coconut Oil is 100% extra virgin coconut oil extracted from green coconuts in Southeast Asia, which has a more ‘lemak’ fragrance akin to the luscious aroma of “kueh kueh”.
- 100g ripe banana, mashed (about one piece)
- 14g Cocorosco extra virgin coconut oil
- 15g milk
- 12g brown or white sugar
- 24g plain flour
- a pinch of salt
- 1/2 tsp baking powder
- 1/4 tsp vanilla
- 10g chocolate chips (optional)
- Combine banana, Cocorosco coconut oil, milk & sugar in a short, wide mug. Stir thorougly with a fork till well mixed.
- Add flour, salt, baking powder & vanilla.
- Stir till everything is just incorporated. Gently fold in chocolate chips, dotting some on top of the batter. Don’t overmix.
- Cook in microwave for about 1.5 mins – 2 mins, or till centre of the cake feels spongy but moist (not too soft/wet) when lightly pressed with your finger. It’s better to undercook it slightly than to overcook it. Allow to cool for 2 – 3 mins before eating.
